GRAPE VARIETY: 100% Chardonnay
VINEYARD: Le Mesnil-sur-Oger, 100% Grand Cru.
SOIL: Clay-limestone. 40-metre-thick chalk formed in the tertiary period.
YEAR: Blend of 30% 2011 reserve wine and 70% 2012 Vintage. Bottling: May 2013
PRESSING METHOD: Starfenberger horizontal automatic press.
AGEING: aged in 600L oak barrels, renewed by one-sixth annually (16,66 % new barrel) then aged in
Champenoise bottles for at least 3 years in our cellars, at a constant 12°C, in Le Mesnil-sur-Oger.
ALCOHOL: 12%
DOSAGE: Brut 0.75% (approximately 7g of sugar per L)
BOTTLING: 750ml bottles engraved Grand Cru and 1.5L Magnums
TASTING NOTES: This brilliant and clear wine greets the eye with a straw-yellow hue streaked with green. Its
lively effervescence keeps a persistent cordon of tiny bubbles in glass. Roy Soleil’s delicate, elegant nose
opens with candied citrus and apricot aromas as well as notes of gingerbread. This cuvée has a mouth-filling
attack exploding with ripe tangerine and grapefruit flavours offering a lingering and lush finish.
FOOD & WINE PAIRING: Sea Bream Tartar with Citrus Fruit. The fleshy wine coats the acidity of the dish. The
very subtle woody notes blend with the fresh fennel flavour. The voluptuous wine meets the richness of the fish.
