16-17° with, for example, duck with olives

TERROIR :
Well-exposed slopes that benefit from the micro- climate in the Trignon Valley. Grabel and limestone scree.

WINEMAKING :
Hand -harvesting and partial de-stemming. Pumping over twice a day and temperature control.
