GRAPE VARIETY : 100% Chardonnay
VINEYARDS : 1/3 from Grand Cru Le Mesnil sur Oger – Les Hautes Mottes, 1/3 from Grand Cru Oger –
Vozémieux, 1/3 from Premier Cru Ludes – Les Corrigniers.
Sustainable and pheromone trapping system (no insecticide), with full ploughing and no herbicide, organic
fertilizer.
SOIL: Clay-limestone, 40-meter-thick chalk formed in the tertiary period.
YEAR: Blend from 50% of 2011 and 50% of2012 – Bottling in May 2013
PRESSING METHOD : press machine quality approved by the champagne Comity
AGEING: 6 months in thermo-regulated Foudre – french oak barrel of 60 Hectolitres without any
malolactic fermentation then ageing in Champenoise bottle in our cellars, at a constant 12°c during 36
months.
ALCOHOL: 12% Vol
DOSAGE: Type Extra-Brut (3g of sugar per L)
BOTTLING: Special bottle shaped from an old bottle of the 18th century found in our cellars when we dig
in 2010 – 750 ml with small head 26 size and a Mytik Diamant cork (no cork taste)
TASTING NOTES: pale yellow with a green light. the perlage is abundant and live a fine mousse which
stays at the top of the glass. Elegant nose, fine, fresh nuts, subtle vanilla aromas which introduce fresh
citrus fruits like grapefruit and lime. the mouth smooth at the beginning lives quickly the place to the lively
freshness typical of the chardonnay grape. The end on white flowers has a great salinity which comes from
the chalk, makes remember the purity of the origin of the terroir.
FOOR AND WINE PAIRING:
Enjoy as an aperitif with small pieces of salmon fillet with fleur de sel, Carpaccio of scallops.
